The hours are the real difference

A kitchen that serves past midnight breaks an assumption buried in a lot of billing software: that a business day and a calendar day are the same thing. They are not. A bill raised at half past one belongs to the night that started at eight, and if the software files it under the next date then every daily report you read is wrong by one shift.

This shows up in small, maddening ways. The day close that has to be run before midnight or the numbers split in two. The report showing a quiet Tuesday because Monday night was counted as Tuesday morning. Ask about the business day boundary before you ask about anything else. It is a setting, and it decides whether your own reports agree with your own memory.

GST is the same law, the state code is not

The rules do not change between states, but the GSTIN does. A Madhya Pradesh registration begins with 23, and it belongs on the bill along with the tax split.

What actually catches people out is not the rate. It is the invoice series: one consecutive series per business per financial year, issued centrally, with cancelled bills keeping their number and staying in the record. A second counter that quietly starts its own series is a reconciliation nobody wants to do in October.

The seasons that decide the year

A restaurant here does not earn evenly across twelve months. Wedding season, the festival weeks and the exam and holiday months move covers far more than anything on the menu does, and a place that plans staffing off a flat monthly average is overstaffed for half the year and drowning for the other half.

What you want from software here is boring: last year this week, against this year this week. Not a forecast. An owner who can see the same week from last year makes a better call about staff and stock than any prediction will.

What a forty-seat place actually needs

Less than it will be sold. A bill printer and an Android phone will run a floor. The things that matter are the ones that are painful to change later.
